    Meringue Ghosts

We have reached that time of year when the air is getting colder and the nights are drawing in (I realise I sound just like my Gran saying that) but the strange thing is – I’m actually really looking forward to the cosy nights this year! I was chatting to someone recently who said they were ‘mourning lock down’ and something about it stuck with me. I wouldn’t say I was ‘mourning’ it, but there are parts of it I certainly miss. I managed to keep a sense of normality throughout ‘lock down’ as I was in work part-time looking after vulnerable and key worker’s students. However, now I’m back…

    Biscoff Cupcakes

So it seems everyone is obsessed with biscoff! That sweet, caramelised, cinnamon yummy goodness seems to be flavouring all sorts of foods these days from cakes to milkshakes and i am not upset about it! Gone are the days of only having one with your fancy coffee as you can get your hands on the biscuits in most supermarkets these days, and if you keep your beady eye out you might even get hold of the spread too. I love the strong punchy flavour the spread packs as it makes it really easy to flavour things such as buttercream and cheesecakes. I knocked these cupcakes up in a bid to…

    Chocolate S’mores Cake

Well, this cake doesn’t really need much of an introduction does it? Just look at that meringue! So… I was browsing instagram one day (shock) and saw some beautiful smores cup cakes – now, im not really a cupcake kind of baker so searched for some inspiration on the ‘smorescake’ hashtag instead… I was expecting to find huge chocolate cakes, slathered in burnt Italian meringue and dripping in chocolate. Instead, to my surprise I found perfectly formed cakes with razor sharp edges and elegant drips of chocolate tickling the sides of the cake. Since when was melty marshmallowy chocolatey biscuity goodness so neat and pretty? Hence – this invention was…

    Mince Pies

First things first… MERRY CHRISTMAS! I blummin love saying that, Christmas is my favourite time of year and I am one of those annoying people who get way too excited way too early. I do however resist putting my decorations up too early. Anyways, the supermarkets at this time of year are adorned with such lovely treats and it’s so tempting to keep picking things up especially when they are usually on offer. But when i say there are some things that are worth making yourself, i mean it when I say this recipe is one of those things! I often look at recipes and think ‘is that going to…

    Cookie Crumbs

We’ve all seen the pictures, those perfectly browned rippling circles of cookie goodness. Piled up in mountains waiting to be devoured still warm from the oven. Cookies are one of those things that we all have our own idea of what we think constitutes the perfect cookie. Thick, thin, chewy, crispy, bitesize, huge, sweet or fruity – the possibilities are endless. Personally, I like my cookie to be crispy round the edges and gooey in the middle. I’d go as far as saying slightly undercooked (SHRIEK!) They need to be soft and gooey, but absolutely not thick and stodgy. It also has to have something with a bit of crunch…

    Macaron Moochings

The warm sun was beaming down on my skin and for the first time this year it felt like Spring was around the corner. It was half term and I found myself in Covent Garden, London indulging in one of my favourite past times. People watching. I absolutely love being in London and I adore pottering around Covent Garden. Most school breaks I find myself there, and with Mr D based there for work it’s a perfect excuse to go down. Off he goes to work and off I go exploring. I can meander around, taking my time to look at rubbish and whilst he usually has the patience of…

    Weekends and Pastries!

Its becoming habit me saying this… but these really are easy recipes! I’m not one for spending hours in the evening or weekends baking/cooking. Like a lot of people, I have a hectic work life and as much as I love to bake, in my spare time I’d much rather be out and about. I do however, always have a constant supply of treats ready for people to munch at any given time. Breakfast is a big deal in our house and our house is always full of people. Over the weekend, the breakfast bar in our kitchen always has bodies gathered round chatting, drinking tea and making food. These…

Vegan Chocolate Tart – GBBO Vegan Week

Let’s talk about vegan week.   It caused quite a stir didn’t it? Unless you’ve been living under a rock you’ll know The Great British Bake Off is on TV at the minute and last week was ‘vegan week’. It seemed to really split viewers right down the middle. Some were ecstatic that the show was highlighting a trend that is becoming increasingly more popular, and others thought the whole thing was ridiculous.    I won’t beat around the bush, I’m not vegan and have no intention of being so. A bit like the time my mate at school tried to get me to go vegetarian. I agreed and lasted…

    Cheese Straws

Cheese Straws   This recipe is so easy and so yummy and considering how much I love cheese straws I am astounded I have reached the age of 29 (I’m not going to be able to say that for many more weeks) without ever making them. Also; is anyone else really upset by the fact that Cooplands have stopped selling their beautiful gooey little cheese straws and replaced them for big horrible dry ones?   Anyway… This week was ‘pastry week’ on The Great British Bake Off and as this dawned on me whilst sat at my desk with no time to bake the extravagant pie I had imagined, my…

    Fool-proof Banana Bread

Yummy moist holiday inspired banana bread!   This just HAD to be my first recipe. This is my fool-proof go-to-never-fails-everyone-loves-it cake. It may not be the biggest most beautiful eye catching cake but trust me, what it lacks in appearance it more than makes up for in taste. It will also be the only recipe you find on here that is measured in cups. I avoid ‘cups’ recipes because they often fail for me, i think because it just isn’t an accurate measurement and i’m too carefree when baking this way! Scroll down for the recipe. This past year, I spent most of my school holidays in Malta with my…
